Cranberry Turkey Meatballs: A Mouth-Watering Christmas Feast
Ingredients:
- 500g Turkey mince
- 25g Beef liver
- 1 Egg
- 20g Psyllium husk
- 25g Carrot
- 25g Celery
- 10 Cranberries
- 2 Sprigs of Dill
- 2 Sprigs of Parsley
- 1 tsp Greek Yoghurt
Method
Place turkey mince into a medium sized mixing bowl.
Then in a food processor add 25g beef liver, 1 egg, 20g psyllium husk, 25g carrot, 25g celery, 6 cranberries, 1 sprig of dill, 1 sprig of parsley.
Blend for 30 seconds until broken down & combined, then mix through the turkey mince.
Next, roll your mix into round meatballs (if the mix is too soft, place in the fridge for 1 hour before rolling).
Place a small amount of Greek yoghurt on top of each meatball.
Garnish with carrot slices, cranberries, dill and parsley.
Please note: Any extra meatballs from this recipe can be kept frozen and defrosted when needed.
